Healthy Sweet Potato Chips

That’s right, healthy ones! You see, my husband has a chip problem, to the point that we will be in an upmarket gourmet restaurant being served delicate and lucious food and he will whisper to the waitress from behind his menu…”and I’ll have a large bowl of fries with that”. However, with these sweet potato chips, there is no whispering necessary, you can shout about them from the rooftop because they are actually healthy!

The use of coconut oil (which is a very clean fat and good for you) really adds its own flavor and some sweetness to these chips. Olive oil works too, but I recommend the coconut oil if you can get it. Most health-food stores sell it, at least in the UK, and Wholefoods definitely does.

  • 2 large sweet potatoes
  • 3-4 teaspoons coconut oil (made liquid by heating in the microwave)
Heat the oven to 210 degrees celcius. Peel the sweet potatoes and slice them thinly in rounds. Pour the coconut oil in to an oven dish/tray and mix all the sweet potato slices around until they coated on both sides. Salt and peper to taste.
Bake in the oven for 40 minutes or until crispy around the edges and golden brown. Serve hot with more salt and pepper to taste.
